Llama Mango Lemon Chiffon Cake

Notes:

  1. 5 layers for each tiers, 10 chiffon layers total

  2. alternating lemon curd and ataulfo/champagne mango pieces in between

  3. fondant decor on top: supported with toothpick, made few days in advance and let air dry

  4. llama colorful decor: edible pen

  5. green cacti shade: equal mix of green + yellow + brown + black

  6. cream: ermine buttercream + mascarpone whipped cream

  7. mascarpone whipped cream: whipped heavy cream, and then add cold mascarpone bit by bit. Different temperature will cause mascarpone cream to split

  8. next time: do mango in between all layers, the lemon curd is strong
