macaron notes:

half the of macaron recipe yield 2 pans with silicone mat --> 18-20 macarons

each pan yield 18-20 shells --> 9-10 macarons

on the template: fill in EVERY OTHER circle, it spreads!

italian meringue: do not stop and scrape the sugar syrup bc it becomes hard, speed #8


RASPBERRY: half recipe + 3 drops rose + 2 grape purple + 2 fuchsia + 2 white + 1/2 tsp raspberry extract (clear)

STRAWBERRY: half recipe + 6 drops rose + 2 fuchsia + 2 white + 1/2 tsp red strawberry extract

VANILLA: half recipe + 6 pink + 6 white. fold the batch more.


frosting notes:

half of the recipe can fill ~20-25 macarons

ermine: do a little less than 3/4 cup of the sugar in the full recipe next time

strain goop after

RASPBERRY: half recipe + 1/2 tsp raspberry extract + 3 drops rose + 1 drop purple

STRAWBERRY: half recipe + 1/2 tsp red strawberry extract

VANILLA: half recipe


decor notes:

do the decor before sandwiching with the filling

gold leaf: do not open the whole page for the leaf, open a little bit and dab a dry brush to take a portion of the gold leaf

use another brush dab in vodka, put a little on macaron, and then dab the dry brush with the gold leaf on it

gold paint: add a little bit of vodka + gold dust, then hit the brush so it splatter, do not point each dot individually
