Note:

1. preheat 450 convection to 425 convection

2. use this particular custard recipe, it is runnier than usual custard

3. use blow torch on top

4. UNDERFILL, and make the puff pastry taller, or it will overfill and be messy

5. puff pastry can be made way in advance and frozen
