Steps from his video:
bring to room temp: 2 blocks cream cheese, 3 eggs, 240 ml heavy cream
preheat oven to 475 F, rack top 1/3 of the oven
cake pan 3 inches tall
add room temp softened cream cheese to the mixing bowl
hand mixer or stand mixer, medium speed until soft and fluffy
add granulated sugar, mix on medium w cream cheese until all dissolved, a minute or 2
scrape the bowl halfway thru, and mix until you can't feel any sugar granules.
add eggs room temp one at a time, thoroughly mixed before adding another one, medium speed
add salt and vanilla extract, mix on low
while mixer still going, slowly stream in cream
sift in all purpose flour
use spatula to fold until thoroughly combined, scrape bowl
add ube:
divide into 3 slightly different sizes:
slightly larger: add very little ube
medium: moderate ube, add drops and mix until desired color
slightly smaller: most saturated ube
poured darkest to lightest, go from a height and poured quickly, gravity will pull to bottom and swirl it
gently swirl a very surface, don't go too far down
placed cake to a baking tray, put to oven 30 minutes, and then start checking in
cake rises
done when top is cracked, edges is brown, center wobbly but not overly liquidy
check every 5 minutes
keep baking until center is slightly wobbly
6 inches he baked 35 minutes
need to cool completely in the pan, let cool 2 hrs minimum
center will collapse
can serve rightaway, or put in fridge and let come back to room temp 1 hr
use parchment to lift cake from the pan
transfer to serving plate
dunk knife to hot water and wipe knife clean between each cut
