Ube Coconut Milk Bread

Ingredients


Ube Milk Buns

Bread flour (12.7% protein content) - 430 gr

Coconut cream/milk (savoy brand) - 135 ml

Milk - 100 ml

Ube - (weigh after steamed) - 100 gr

Sugar - 70 - 90 gr

Butter - (melted, unsalted) - 30 gr

Egg - 1 large, room temp

Salt - 5 gr

Yeast - 10 gr


Ube Fillings

Ube - (weigh after steamed) - 200 gr

Heavy cream - 220 ml

White chocolate - 50 -60 gr

Salt - 2.5 gr

Butter - 15 gr


Steps:

steam ube instant pot 13-15 min, quick release

break them to small pieces, fork, spoon, potato masher

divide to 2 portion: 100 g dough, 200 g paste


DOUGH

blender: 100 g ube + 135 ml coconut milk

warm 100 ml milk microwave 20 seconds, add 1 tsp sugar, add instant yeast 10 g, mix, cover plastic wrap, rest 5 min --> thick foam

bowl: 430 g bread flour + 5 g salt + 70 g sugar, mix, make well, add yeast mixture, add 1 large room temp egg, add ube mixture, 30 g unsalted butter, mix w spatula

kitchenaid mixer:

stir 1 min until everything is attached to dough hook

speed 2, 3 minutes

speed 4, 2 minutes

will look very sticky + wet bc temp increase when mixing

clean bowl, scrape side

speed 4, 3-4 minutes --> dough can stretch, glossy, smooth

grease large bowl w oil + butter, grease hand, roll to ball, place to bowl, grease top of dough, rise until 2x size, 35-40 mins


FILLING

220 ml heavy cream + 200 g ube

high heat, stir continuously to avoid burn

as soon boil, place 50-60 g white chocolate, 2.5 g salt, 15 g butter

continue to simmer, then blend high for couple of minutes until smoothie like consistency

when it cools will be thicker. place in bowl, come to room temp and cool down, cover w plastic wrap, place in fridge


DOUGH

roll into log, divide to 12 equal pieces, 75-80 g, form to ball, cover plastic wrap, rest 10-15 minutes, relax so easier to work with

grease baking pan

bun, roll the side, make the center fat, roll like dumpling

filling: 35 g each too much, next time do 30 g

place in tray, rest 30 minutes

dust w powdered sugar on the top

bake 22-25 minutes, slightly brown on top --> remove it
